Blueberry Muffins

Ingredients

(6 servings)

  • 1/2 cups oatmeal
  • 1 tbsp baking powder
  • 3 tbsp yoghurt (low-fat) or soy yoghurt (unsweetened)
  • 1 egg
  • 2 tbsp stevia
  • 2 tbsp nut (chopped)
  • 3 tbsp milk (skim)
  • 1/2 tsp vanilla powder
  • 3/4 cup blueberries

Directions

  • Wash and drain the fresh blueberries. If using frozen fruit, thaw.
  • Mix the oatmeal, baking soda, plain yogurt, egg, erythritol, chopped nuts, and remaining ingredients. Fold in the blueberries.
  • Fill the batter into a muffin pan. Silicone cups work best for this purpose. Bake in a preheated oven at 390 °F (200 °C) for about 20 minutes.
  • Let the muffins cool down.
